Instructions

Prep the Tofu

Press tofu thoroughly to remove excess moisture. Toss gently with soy sauce, lime juice, and garlic. Let sit briefly to absorb flavor.

Skewer & Cook

Thread tofu onto soaked bamboo skewers. Lightly dust with cornstarch for a crisp exterior. Roast at high heat, grill, or sear in a hot pan until golden and lightly caramelized on the edges.

Build the Glaze

In a sauté pan, warm Thai Chili Guava sauce with soy sauce, vinegar, ginger, and maple if using. Simmer until glossy and slightly thickened—aim for a clingy, brushable consistency.

Glaze to Finish

Brush or toss tofu skewers in the glaze just before service. Avoid overcooking after glazing to maintain texture.

Assemble the Bowls

Spoon warm jasmine rice into bowls and sprinkle with sesame seeds. Lay glazed tofu skewers over the rice.

Add Fresh Contrast

Top with cabbage, carrots, shoots, cilantro, sliced chili, and roasted cashews. Serve with extra sauce on the side.

Why It Works for Restaurants

Plant-Based Crowd Appeal – Satisfying texture and bold flavor make it attractive to vegans and omnivores alike.

Operationally Efficient – Tofu can be roasted in batches and reheated to order, then glazed à la minute for speed.

Balanced Texture – Crispy tofu, fluffy rice, crunchy vegetables, and sticky glaze create layered eating experience.

Menu Flexibility – Works as a bowl, wrap filling, appetizer skewers, or protein add-on.

Chef’s Tip

For maximum texture retention, roast tofu on a perforated pan or rack to allow airflow. Glaze right before plating and hit with a final sprinkle of flaky salt to amplify the sweet-heat contrast.
